The Carnival Cheesecake at Sushi Roku delivered a flawless finish—light, airy, and plated to impress. Its creamy center rested on a crisp graham crust, with a fresh berry topping that added just the right tart balance. The texture leaned mousse-like, not heavy, making every bite feel indulgent but clean. It wasn’t too sweet, and the size was perfect to enjoy solo or share. Sushi Roku gave its dessert menu real attention, and this dish stood out. I’d come back just to experience the Carnival Cheesecake at Sushi Roku again.

After dinner, I walked the Forum Shops again. Nearby restaurants shouted for attention—loud music, big signs, neon lights. But Sushi Roku Las Vegas had no need to compete. It relied on excellence. My valet arrived in under a minute. The final goodbye echoed everything that came before it: composed, warm, and efficient. That kind of ending sticks with you.
