UNLV Hospitality Students Spotlight Key Trends at Winter Fancy Food Show 2024
In a bustling showcase of culinary innovation, eight graduate students and three professors from the University of Nevada Las Vegas (UNLV), William F. Harrah College of Hospitality, participated in the 2024 Winter Fancy Food Show hosted by the Specialty Food Association (SFA). Held from January 21-23 at the Las Vegas Convention Center, this event spotlighted over 1,000 companies and their diverse array of products from around the globe.
Dr. Joseph Lema, Professor and Doctoral Program Coordinator at UNLV, expressed gratitude for the collaboration with the Specialty Food Association, emphasizing the invaluable learning experiences and industry insights gained from engaging with leading companies and professionals.
Key Trends Identified by UNLV Hospitality Students:
- Environmental Consciousness: The UNLV Junior Trendspotters observed a significant emphasis on environmental sustainability among exhibitors. Notable examples include regenerative organic nut butters from Burroughs Family Farms and plant-based, animal-free shrimp by IBIDEN Bussan Co., Ltd. These products underscore a growing commitment to eco-friendly practices in the food industry.
- Beverage Innovation: The Winter Fancy Food Show showcased a wave of beverage innovation, with products like low-sugar energy drinks from Club Mate and the alcohol-free sparkling beverage TÖST Rosé gaining prominence. Additionally, advancements in coffee culture were evident, with offerings such as the Artly robot coffee maker catering to evolving consumer preferences.
- Cultural Heritage: Exhibitors demonstrated a dedication to preserving cultural traditions while embracing modern tastes. UNLV students noted the popularity of products like low-salt miso from Fukuroya Co., Ltd., and Vandersterre Prima Donna cheese, which celebrate authentic flavors and culinary heritage.
